Fish Curry

A seafood curry hasn't been high on my list of things to eat but I finanlly managed to give one a crack and enjoyed it. Flathead, scallops and squid went into this one but it'd work with any catch, and might be a good one for either a sharing small catch or tarting up something not so great on the plate.

Ingredients
800ml coconut milk
60 gm panang curry paste
60ml fish sauce
2 tablespoons palm or broown sugar
4 kaffir lime leaves (torn)
2 tablespoons peanut oil
500gm flatehead fillets
500gm scallops
500gm squid rings
200gm green beans
1/2 cup torn fresh basil leaves
1/2 cup roasted chopped peanuts
2 red chillies de-seeded and sliced thinly

Method
1) Place coconut milk, curry paste, sugar and lime leaves in a wok and simmer until it reduces by a third (about 15 mins)
2) At same time cook seafood in peanut oil in frypan until it's just done (ie just changes colour...it gets more of a go later). Drain on paper towel.
3) Add beans and seafood to curry mix and cook until beans are just tender (if ya using squid add it last as it takes bugger all to cook and goes to rubber if ya overcook it).
4) Serve curry sprinkled with chillies (I wimped out), basil leaves and chopped nuts.

Looks great to me too poddymullet. I'd have definately added the chillis too though! :grin:

Sxxt mate that does look tasty.
I love my currys but that looks better than mine.
