chilli crab


2 live mud crabs-
1 tbsp salted black beans
2 cloves garlic,crushed
1 tsp grated fresh ginger
1-2 red chillies,seeded and finely chopped
2 tsp sugar
1/2 cup water
1/4 cup tomatoe sauce
1/4 cup peanut oil
4 spring onions


cut crabs in half-and clean,rinse with water.Chop body into 4 pieces,leave legs attached.
remove large claws and crack in several places,crack legs lightly.

rince black beans and place in bowl.
mash with a fork and stir in garlic,chilli and ginger to taste.mix sugar and water and add tomatoe sauce.

place wok or large frypan on heat. Add the black bean mixture and stir-fry for 1-2 minutes,add the
crab pieces and stir-fry quickly umtil colour begins to change.Stir in tomatoe sauce mix.
Reduce heat to medium and put the lid on,for 5 minutes or until the pieces are red and cooked right thrrough.
add the spring onions toss well and serve immediately.with rice
